Hawaiian Chicken Sandwich


A friend of mine gave me a few issues of Family Fun Magazine. It is filled with good ideas and recipes. I tried this one and it is very simple. It made me feel like a real cook and tastes like the Bonzi Burger at Red Robin.

4 slices canned pineapple (reserve 2 TBS of juice)
1 1/2 TBS soy sauce
1 1/2 TBS honey
1 TBS molasses
1 1/2 tsp lemon juice
1/2 tsp mustard
1 clove of garlic minced
2 tsp minced fresh ginger or 1/2 tsp ground ginger (I didn't have any, and it still tastes good)
1 1/2 TBS oil
4 boneless skinless chicken breasts
salt to taste
4 rolls (toasted or grilled)

1. Blot pineapple slices dry
2. Blend reserved pineapple juice, soy sauce, honey, molasses, lemon juice, mustard, garlic and ginger.
3. Cook the chicken until just done (you can figure that part out). Add the sauce to the pan and fry another minute or so, coating both sides of the chicken.
4. Add pineapple pieces to the pan and cook 30 seconds on each side.
5. Assemble sandwiches. Add lettuce leaves if desired.

sounds very yummy!WE have good meals this week for family camp, maybe next week when we are back to hot dogs and burritos!

I thought you were allergic to pineapples, Alysun? Am I mixing you up with someone else?

Yes, I am not supposed to eat pineapple. I get terrible sores in my mouth, but I love it so much that sometimes I eat it anyway. In this recipe, I just leave that yummy, juicy piece off mine.
