Recipe

I am pretty tired of turning on my computer and seeing my gigantic mass of hair, so I need to post something to take its place. Here is a quick, easy recipe for Turkey Tetrazzini. It could also be Chicken or Ham Tetrazzini or Tuna Noodle Casserole. For other great recipes, check out the food blog I keep with a bunch of other food loving friends at Food Love.


America's Test Kitchen recipes never disappoint - - they often take forever and a day to prepare, but they are delicious. One recipe I really like for a quick, hearty dinner is their Turkey Tetrazzini. It's almost as simple as one of those boxed dinners like Pasta Roni and this is much cheaper and better for you.


Turkey Tetrazzini
2 tbs. butter
1/2 onion finely chopped
3 cups dried egg noodles
2 cups low sodium chicken broth (I used water and chicken base/boulion)
1 cup whole milk
1 cup frozen peas
2 cups chopped cooked turkey, chicken, ham, or tuna

Saute onion in butter about 5 minutes and add the noodles and liquid. Simmer uncovered, stirring occasionally about 10 minutes. Add turkey, chicken, ham, or tuna and peas. Heat an additional 5 minutes more.

*The original recipe calls for button mushrooms sauted with the onion for 15 minutes and then removed from the pan while noodles cook. Add them back in with the turkey and peas.

I made this for dinner. Nathaniel is going crazy over this stuff. He's on his third bowl. With only one pot to clean, what's not to love?
